Until the end of August, in the deepest and coldest waters around the island of Menorca, as well as in the bays of other islands of the Balearic archipelago, a large number of lobsters accumulate. Here they are abundantly finding their food, which is usually served by “flowers” of corals and sea urchins, but they, in turn, are in the menu of local restaurants in the form of a very simple in cooking, but at the same time, a delicious dish called “Caldera”. Despite the fact that according to the classic recipe, it is prepared in a clay pot with vegetables and served at the table with biscuits, in some institutions located in the Balearic Islands, this dish was decided to improve by adding almonds, eggs, fennel, brandy and other very unexpected ingredients.
